Only selectively hand picked ripe cherries are chosen, then naturally sun dried on raised beds. This time honoured process allows the fruit to dry evenly and gradually, intensifying natural sugars and enhancing depth and character in the bean. Shade grown conditions further slow maturation, contributing to a rounded, expressive cup.
